Dinner
I have completely spaced taking pictures of my meals. A happy note is that I successfully turned down cake and ice cream at my son's birthday party. Yay me!
Here's dinner tonight: 4 oz baked chicken, asparagus, mushrooms, roasted peppers and a red potato. Yum!

Breakfast & Lunch
I forgot to take a picture of my Starbucks oatmeal. It's normally the only oatmeal I like, but today's wasn't good and I threw half of it away.
For lunch, I used a dollar off coupon at Runza and tried their grilled chicken Asian salad. It was fantastic! I used half of the dressing they gave me, and had enough wiggle room left that I got a medium order of Frings.

Dinner
Before I left for the field trip today, I put an almost-four pound roast in the crock pot.
Then I forgot to turn it on.
I got home at 3pm, and dinner was expected at 6:30, so I just popped it in the oven at 375. It turned out pretty tasty, but was fatty enough that it would have done better with the lower, longer cooking.
The best part of the meal? The roasted carrots. They tasted like candy.

Day Two: Dinner
It's my son's fifth birthday! I had four Taco Bell tacos with no cheese.
The birthday boy ate the same amount, only with cheese.

Day Three, Lunch
I forgot to take a picture of my peanut butter & pretzels breakfast. Here's lunch: one serving of noodles, 3 oz of leftover baked chicken and roasted Brussel sprouts in a balsamic brown butter sauce.
Soooooo very yummy!

Day Two, Dinner
Amazing husband made up for lunch by making baked tilapia, roasted red potatoes, cooked carrots and a mushroom/fresh spinach mix topped with a bit of vinegar.
Day Two: Lunch with Hubby
Just mark this up as an epic fail. Loving husband decided we needed to eat at Freddy's, home of everything fattening.

Day 1: Dinner
4 oz chicken breast baked in my special balsamic brown butter sauce
1 cup green beans
1 serving sweet potato fries
Snacks for today was pretzels and peanut butter.
And I have enough calories left to split a beer with the hubby later! Score!

Lunch!
I need to go to the grocery store. I'm also going to avoid fast food for April...starting tomorrow.
This is a grilled chicken taco salad from Taco John's, without sour cream or cheese. A touch of ranch and a bunch of salsa are about to be added.

Breakfast, part two
Okay, so I got hungry, which is often the case when I've eaten too much the day before. Here's my addition: a packet of maple brown sugar oatmeal. I cannot STAND oatmeal, so you know I'm hungry.
April Challenge
I've decided to challenge myself to post a picture of each meal I eat during the month of April. Thank goodness I didn't start yesterday, because Easter was not pretty.
Starting my month with my cuppa coffee breakfast. Hopefully it kicks in soon!

Welcome!
A long time ago, before I had a gorgeous two-year old daughter, I was well on my way to being a healthy person with a weight I could say in public.
I'm not going to give all kinds of excuses as to what happened because excuses are bull, even if they are valid explanations. They're still bull.
Now I find myself finally back on that wagon, and I want a place I can document what's happening. I am, by nature, someone who wants to over share. I have had a blog in one way or another for the past 13 years, and I miss it when it's not present in my life.
So welcome to my new blog. It's still shiny and has that new-blog smell.
In the past, I used Weight Watchers to lose weight and it worked brilliantly. Then they went and tweaked it and I just cannot wrap my head around it anymore. So I've been using the MyFitnessPal app on my iPhone for almost a month now, and it's been going great!
The heaviest I've ever been was 317. Someday, that number is going to be tattooed on my body because I never want to forget that moment when I stepped on the scale and saw those traitorous numbers. I never want to lose that fear of somehow getting back to that weight...because if I'm afraid of it, I'm aware of it, and I won't go back.
Right now, I'm about 26 pounds less than that highest weight. In the past three weeks, I've lost 9 pounds.
My goal for the month of April is to share a picture of every meal I eat, including snacks. I am a major foodie and am constantly trying new recipes, so it should be interesting. And none of my Facebook friends can complain because it's on my blog and not on my feed. So nyeah. ;-)
Welcome to my world, watching as pounds go bye.
